Is it law that we should carry our shotgun/firearm certificates with us every time we go out with the gun?

No, but a constable is entitled to ask anyone he believes to be in possession of a firearm to produce the relevant certificate.
If the certificate is not forthcoming the constable can seize the guns.
For that reason it is sensible to have your certificate in the car.
The police have very sophisticated communication systems these days and, in theory, should be able to check with head office whether or not you have a certificate.
