Breast meat from a young wild goose
Sage leaves for garnish
Sage or quince jelly, or strong English mustard
Heat the oil in a frying pan and cook the breast meat for seven minutes on each side. Slice the meat across the breast and arrange on a serving dish – it should be pink in the centre. Garnish with fresh sage and serve with sage or quince jelly, or strong English mustard.
