Catering company Game and Flames have launched a course that covers the entire venison production process from simulated stalk to consumption.

Game and Flames have been running butchery courses since 2016, but the new experience combines those elements with rifle and stalking lessons.

For the launch, members of the media were introduced to firing .22 rifles at the onsite range, eventually working their way up to firing a .308 from shooting sticks. The course members were then taken on a simulated stalk round New Lodge Farm near Hastings, where the courses take place. The day was rounded off with a barbecue venison feast, and detailed interactive butchery lessons.

Owner of Game and Flames, Cai Ap Bryn, told ST: “We’ve been running butchery courses for a number of years but this is the first time that we have incorporated firing on the range and the simulated stalking element.

“Doing it this way provides non-stalkers with a detailed insight into how venison is sourced and gives people a full field to fork experience without actually having to kill an animal which allows us to be far more inclusive and will appeal to a broader audience.”
