Leading caterer Levy rolls out wild venison

Caterer Levy has announced it will expand wild venison offerings across its venues as part of what it describes as its "deep decarbonisation journey"

Sports and entertainment caterer Levy has announced it will expand wild venison offerings across its venues as part of what it describes as its “deep decarbonisation journey”. Levy operates catering services at major UK and Irish venues including Twickenham Stadium and the O2 Arena.

The initiative follows a visit to Macaroni Farm, where campaign organisation Eat Wild guided Levy’s sustainability team to observe deer in their natural habitat and “learn firsthand about wild venison’s benefits for people and planet”.

Kevin Watson, sustainability director at Levy, said the visit demonstrated why gamekeepers need to control wild deer populations and how Levy could contribute to addressing their environmental impact. “It shows us that we’re doing the right thing,” he said.

The collaboration addresses a growing environmental challenge whilst creating new menu opportunities and raising public awareness of wild meat alternatives.

Louisa Clutterbuck, co-founder and CEO of Eat Wild, said: “We’re delighted Levy is using venison. I can’t wait to see it across as many sites as possible. It’s such a versatile, fantastic meat, and I think Levy will take full advantage of that.”

Levy described wild venison as a “nutrition powerhouse” that “aligns perfectly with our climate commitments to environment, nature and health”. The company added: “It also tastes incredible, and we’ll be putting much more of it on our menus.”
