Ingredients for this game cookery recipe, which serves 4.
2 oven ready pheasants
1 cinnamon stick
4 allspice
4 cloves
2 star anise
50g butter
1 orange
Sea salt
Milled black pepper
Method for this game cookery recipe
Rub the butter over the pheasant and season well. Blend the spices in a coffee grinder and sprinkle over the pheasant. Cut the orange in half and place in the cavity. Roast in a hot oven 200°C for 35 minutes. Baste with the butter during cooking. Remove from the oven and rest for 20 minutes before serving.

As Lady Hartlip says in The Shooting Party, “it is too divine!”
There are 19 drives over 4,500 acres, and Half Moon is the signature drive. It’s a crescent tiered with trees and coverts around and I was drooling at the wonderful retrieving possibilities. This brings me back to The Kennels. Top of my Christmas list is Kennels membership. At £160 it is more than value for money and for an extra £50 you can sign your dog up where he will get his own bowl and you can enjoy feeding time with him in the Restaurant. There are a whole host of events in the calendar, and one not to be missed is Sarah Miles holding gundog training sessions there in the spring.
