Ingredients: • strawberries • lemon juice
• icing sugar • borage

1. Wash and hull the strawberries. Put three or four of the best ones aside and place the rest in the food processor with the juice of a lemon and a tablespoon of icing sugar.
2. Whiz until smooth and taste – add more sugar if necessary. Chop a few leaves of borage finely and slice the whole strawberries.
3. Add to the processed strawberries and pour into an ice cream maker or into a tub and place in the freezer. Stir after an hour or so and then every half-hour until frozen.
