Game cookery recipe: Asian spiced woodpigeon

Ingredients for this game cookery recipe, which serves 4.

4 woodpigeon breasts
Pinch of garam masala
Pinch of cumin
Pinch of cardamon
150g natural yoghurt
1 small red onion
1 bunch fresh coriander
Cornish sea salt
Milled black pepper

Method for this game cookery recipe

Mix the spices together and sprinkle over the woodpigeon. Season and sear the woodpigeon in a hot pan and cook for one minute on each side, then set aside to rest. Then slice the onion as thinly as possible. Pick and chop the fresh coriander. Place the woodpigeon on a serving dish and top with the yoghurt, onion and coriander. Serve with some warm naan bread.

I would say one meets a thoroughly nice bunch of people in the shooting world. I met a kindred spirit at the end of last season; whilst admiring her Land Rover she got out an ingenious sturdy plastic step and slotted it into a square ‘hole’ near the tow bar. Up jumped her dogs one by one into the back of the car. I love a new gadget and was struck by the simplicity of this one, so of course I had to have one. I have a lovely dog box in my Land Rover but it makes the back end very high and, while it is fine for the dogs to jump in to, I think it is a bit hard on their shoulders when jumping out.
