A simple, tasty duck recipe.

Step by step
1 First, pull the mallard skin off the breast and discard as it can be a bit chewy if it’s not cooked right.
2 Slice the duck into strips 1cm thick. Slice the peppers and onions the same way and cut the garlic into tiny chunks. You could even grate the garlic.
3 Throw everything into a hot pan and fry, super-hot, for 3 minutes. Once you start to see some charring, sprinkle the fajita seasoning over the top and cook for around 6 to 8 minutes.
4 Lay out the wraps on the plate and divide up the cooked mixture. Add any additional toppings you like, roll it up and enjoy straight away.
