When deer stalking, what are the advantages of a stainless steel barrel over one that's blued? I would have thought a bright, shiny stainless version would flash or glint in bright sunlight?

Indeed they do but most now have a satin finish so glint is no longer a problem.
The advantage of stainless steel is that it is less prone to rust than blued/blacked steel.
Note that it is NOT stainless if you abuse and neglect it!
It’s just more resistant to rust than ordinary, blued steel.
You have to look after a rifle with a stainless steel barrel and action and a composite or laminated stock exactly the same as a blued steel, walnut stocked one.
Stainless and plastic are more forgiving and the stock won’t warp in the rain but you still have to look after them if you want good and reliable service.
